Meat Free Monday


Simple classic wholesome salad for meat free mondays.

Recipe: -

1/2 Organic Kent Pumpkin
1/2 Organic Sweet Potato
2 Organic Carrots
1 Serve Organic Rocket Leaves
Crumbled Feta
2 Cloves Organic Garlic
Balsamic vinegar
Himalayan salt to taste
Black Pepper
Olive Oil

Method: -

Roast carrot slices, pumpkin and sweet potato with himalayan salt, pepper, garlic cloves and olive oil at 200 degrees celcius for 45 mins.
Once roasted toss with rocket leaves, add feta and dress with balsamic vinegar and olive oil. Add more salt if rquired.
